Chef Roy Benningfield has been a part of the downtown Boulder food scene for almost 20 years. As the Chef de Cuisine at SALT, he takes pride in being one of the pioneers in the non-GMO and locally/sustainably sourced food movement. Chef Roy was born and raised here in Colorado and still feels like there is something magical happening every time he comes downtown... yes, even for work!
I love driving through Lyons and coming into Boulder via the Peak to Peak highway. It’s a long beautiful drive and I always recommend it to our guests at SALT that are visiting from out of town.
For drinks downtown, I have really enjoyed the cocktail menu at Emmerson. The menus are really creative and they do a great job at pairing drinks with food. I always get happy hour at the Brasserie Ten Ten. It is affordable and delicious. Steak Tartar and the Duck Rillette are my absolute favorite. I eat at Black Cat whenever possible. The Charcuterie and wine list are always on point. Wild Standard has oysters and a raw bar that I like to finish up with. I really like eating tons of appetizers throughout the day instead of one large meal! That is the way to do it in downtown Boulder when you are surrounded by so many amazing restaurants!
Boulder has always had a great melting pot of different cuisines and I am very glad to be a part of it!
